An easy scratch Dutch Oven Pineapple Nut Cake that comes out most excellently when you get the temperature right. Remember to under-heat the bottom of the oven. Definitely worth a couple tries to really learn how to get it right in your oven.
Pineapple Nut Cake
A great tasting scratch cake recipe.
- 1 No. 2 can crushed pineapple
- 2 cups flour
- 1 cup sugar
- 2 eggs, beaten
- 1 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp mace (spice) or nutmeg
- 1 cup pecans, chopped
- 1/3 cup melted margarine
- shortening or pan spray
Preheat the Dutch Oven
Mix all ingredients until lightly moistened thru
Pour into greased preheated Dutch Oven and bake until browned and toothpick/knife is retrieved clean
Let sit for at least 20 minutes before serving
Fits in a 10-inch Dutch Oven snugly or a 12-inch Dutch Oven. Under heat the bottom of the oven by 1 or 2 coals. Tastes best when used in a dessert oven or sweet dish oven rather than a savory dish oven.
Note: Mace is a spice made from the covering of the seeds you know as "nutmeg". If you don't have (or want) to find mace, you can use nutmeg which tastes very similar. Consult Wikipedia for more if you are curious.
