Hearty soups are the best after long days out camping or working. Dutch Oven Minestrone Recipe produces enough soup for a large group.
A hearty soup that feeds the whole crew.
- 2 lbs stew meat
- 1 can tomatoes
- 1 can kidney beans
- 1 can pitted ripe olives
- 2 large carrots, chopped
- 2 large celery stalks, chopped
- 1 large zucchini, sliced
- 6 oz seashell macaroni
- 1 small onion, chopped
- 2 tbsp vegetable oil
- 6 oz Parmesan cheese
- 4 cubes beef bouillon
- 4 cups water
- salt & pepper
Preheat the Dutch Oven
Place the oil and meat in the oven and brown well
Chop the ingredients and open cans while the meat browns, use the juice
Add 4 cups of water and bouillon
Once meat is cooked, add all of the other ingredients, add water if desired
Cover and cook approximately 45 minutes
This is going to take 1-2 refreshes of charcoal, be ready. 14-inch or 16-inch oven required. Use 2 to 3 more coals on the bottom and a couple less on top from typical. The cooking time greatly depends on the time it takes to cook the meat so experience will be the best guide.
